
A flavorful, Mediterranean-style French chicken dish that’s high in protein and low in fat.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/2 onion (sliced)
- 2 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1/2 cup black olives (pitted)
- 1/2 cup low-sodium chicken broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt & pepper to taste
Instructions:
- Heat olive oil in a pan over medium heat.
- Sauté the onion and garlic until soft.
- Add chicken breasts and brown on both sides.
- Add cherry tomatoes, olives, broth, thyme, and oregano.
- Cover and simmer for 15–20 minutes until chicken is cooked through.
- Serve with a side of roasted vegetables or a small portion of quinoa.
