Poulet Provençal, Healthy French Chicken Stew

A flavorful, Mediterranean-style French chicken dish that’s high in protein and low in fat.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/2 onion (sliced)
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup black olives (pitted)
  • 1/2 cup low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt & pepper to taste

Instructions:

  1. Heat olive oil in a pan over medium heat.
  2. Sauté the onion and garlic until soft.
  3. Add chicken breasts and brown on both sides.
  4. Add cherry tomatoes, olives, broth, thyme, and oregano.
  5. Cover and simmer for 15–20 minutes until chicken is cooked through.
  6. Serve with a side of roasted vegetables or a small portion of quinoa.
